Salmon Night with Personal Chef Alan

Fresh salmon filets are marinated in a minced shallot, lime juice, lemon olive oil, fresh minced garlic mixture, then dredged in flour and pan sautéed in butter olive oil. The cooked fish is served on a bed of sautéed squash threads seasoned with fresh herbs and is surrounded by a sweet and slightly spicy red bell pepper coulis.
