Arbequina- Med/Robust Intensity.

Arbosana – This remarkable early harvest Arbosana is a favorite of oil tasters. Praised for its overwhelming green fruit characteristics and balance, it is creamy, slightly herbaceous and displays notes of artichoke and green almond. A delicate spiciness permeates. Country of Origin: Chile

Coratina –  Mild, true to any well-made Coratina, this fruity and well balanced example displays green apple peel notes. Extremely fragrant and fruity this mild & harmonious oil is more pungent than bitter. Country of Origin: Chile

Empeltre – Sweet, ripe fruity and delicate, this uncommon Spanish variety is typically used to make table olives. The flavor notes are almond and artichoke. Equal parts bitterness and pungency. Country of Origin: Chile

Estepa Virgen – Medium Intensity, Estepa Virgen is a fruit juice made exclusively from the most representative olive varieties grown in the area of the Protected Designation of Origin Estepa. The olives are harvested when they turn from a green to a reddish tint, obtaining a sensory profile which distinguishes with a scent of its high fruitiness and olive leaf- herbal aromas with almond notes in the background. In the mouth, you encounter harmonious but complex with notes of apple, banana, artichoke and other fruits. The light bitterness and pungency are characteristic of these early harvested olives. Favolosa – This oil produces a spicy chili pepper sensation throughout the mouth and in the back of the throat. Herbal qualities with notes of arugula, artichoke, almond & herb. Well balanced with a peppery kick finish. Country of Origin: Chile

FS-17 – Medium intensity. An extremely complex oil with green grassy notes, coupled green apple and middle floral notes with hints of green banana. Nice and spicy.

Koroneiki Greek – Robust Intensity. Herbal, extremely floral, and loaded with lingering green banana notes on the finish, this early-harvest Koroneiki is robust and layered. Country of Origin: Greece.

Koroneiki Chile – Medium Intensity. Loaded with green banana flavors, the telltale sign of any well made Koroneiki, our Chilean example is also herbaceous & spicy with capsicum sensations and slight artichoke notes. Super high score in fruitiness! Country of Origin: Chile

Manzanillo  This Early harvest Australian Manzanillo is loaded with fruit: Green strawberry, green apple, melon and jammy notes. If it’s fruit that you desire, look no further. Creamy and viscous, with a slightly bitter middle, and desirable pepper finish. Country of Origin: Australia.

Martena – Robust Intensity. Displaying notes of ripe olive fruit, green peach, and green tomato, this modestly bitter Martena has a slight pepper finish. Country of Origin: Spain.

Melgarejo Hojiblanca – Mild Intensity. Crafted by one of the most decorated producers in the world, this early harvest Hojiblanca is extremely fruity, boasting notes of berry, stone fruit, red apple, banana, and confectionary. Country of Origin: Spain.

Nocellara – Mild Intensity. Mild, fruity, and viscous, this Organic Sicilian Nocellara has low bitterness and pungency and displays center notes of creamy avocado and berry.  Country of Origin: Italy.

Organic “Freestone” Chetoui – Robust Intensity. By removing the stone and harvesting early resulting in a very low yield & exceptionally high phenolic content for this variety, this oil displays ample bitterness & pepper along with herbal, mint and green tea notes. Country of Origin: Tunisia.

Oro Bailen Reserva Familiar Picual – Medium Intensity. Crafted by one of the most decorated producers in the world, this early-harvest green Picual has a nose that will knock your socks off. This award winner displays complex herbaceous notes of green olive, green tea, green tomato, and green peach skin. Processed at extremely low temperatures. Country of Origin Spain.

Picual Boort – Australian of Medium Intensity. This super early harvest creamy Picual is loaded with green tomato and tomato leaf flavors. Stone fruit slight bitterness and grassy, herbal notes make for one complex oil! This remarkable EVOO won a highly coveted “Best of Class” award at the 2013 New York Olive Oil Competition. Country of Origin: Australia.

Infused Olive Oils

Baklouti Green Chile – The Tunisian Baklouti pepper is rare and unique to the Barbary Coast of North Africa. This is the only example of this fruity and mildly spicy green chili olive oil in the world. Baklouti chili olive oil is made by combining one pound of organic extra virgin olive oil with 1.6 pounds of fresh, whole green, Baklouti chilies. The two ingredients are then crushed and mixed in the malaxer, fusing the fresh green pepper with the organic olive oil. This is truly a unique artisan product that has hundreds of applications. CAUTION!! VERY HOT!!

Basil – Fresh, green and herbal. Basil and olive oil are two integral ingredients in Mediterranean cooking and it was just obvious to us that the two would be wonderful together. Try it on a summer salad or caprice and let your taste buds travel to the shores of the Mediterranean. Blood Orange – As the Blood Oranges and Tunisian olives ripen, we press them together to form this beautiful (agrumato) or combination of whole, fresh citrus fruits crushed with olives. Our Whole Fruit Blood Orange is exceedingly versatile; use it on fish and seafood, chicken, fruit, salads and much more.

Butter Olive Oil – This creamy extra virgin olive oil is naturally infused with the rich flavor of butter. Use this golden, vegetarian, dairy-free olive oil as a butter substitute in baking or anywhere you might use melted butter including: flavoring hot popcorn or seafood (i.e. crab or shrimp), dipping bread, drizzling over pasta, mashed potatoes, and rice, or baking.

Chipotle  The smoky flavor of this chili-infused oil is great for marinating steaks and brushing on grilled chicken or seafood. Drizzle over vegetables or pizza for a spicy meal. It’s an excellent dipping oil for artisan breads, finishing oil for soups, pasta or grain dishes, and a wonderful base for dressings and marinades.

Cilantro & Roasted Onion Olive Oil – Made with perfectly blended flavors of roasted, sweet, Cippolini onions and cilantro, this savory oil works wonderfully for sautéing vegetables or marinating meat, fish, and poultry.

Garlic – Our Garlic Olive Oil actually gives off the flavor of pungent, fresh garlic. Since garlic and olive oil are almost always used together in Mediterranean cooking, you can use this in just about anything. It’s great to mix in with Pasta or mashed potatoes, to drizzle on steaks before grilling or to just dip bread.

Harissa – Popular in North Africa and the Middle East, Harissa is made with chili peppers (often smoked), garlic, caraway, coriander and cumin, which are pounded into a paste and left overnight to develop its flavors. We’ve added more peppers to this by popular demand, making it our HOTTEST infused EVOO. Herbs de Provence – With top notes of savory thyme and bay leaf, our all-natural Herbs de Provence extra virgin olive oil is a show stopper when drizzled over grilled chicken, rubbed on turkey before roasting, or used for bread dipping.

Lemon – Our Eureka Lemon olive oil is produced by pressing whole, fresh lemons together with late harvest olives at the time of crush. Its light, refreshing flavor is just perfect to sauté shrimp or scallops or to drizzle on chicken or fish. Citrus oil is great on salads, in marinades and for baking.

Fused Whole Fruit Mandarin  Made with fresh Mandarin citrus fruit picked at its peak and crushed with fresh, certified organic early harvest Chetoui olives using 100% mechanical cold extraction methods.  This fused citrus oil is redolent with the intense flavor of fresh Mandarin zest.  Use it in baked goods such as tea cakes, in dressings, and marinades.  It is particularly delicious with poultry

Milanese Gremolata – Gremolata is a traditional Italian herb condiment consisting of fresh lemon zest, minced garlic, Italian flat leaf parsley & a hint of mint. The herbs and citrus zest are typically crushed together in a mortar to release their pungent essential oils. Try finishing your fish with this exciting flavor combination. It is also traditionally served with osso buco, veal & other slow braised dishes to add a zip of flavor.

Persian Lime – Zesty Persian lime is married with extra virgin olive oil for an unbelievably fresh, fragrant burst of citrus. This flavored oil will take your recipe to the next flavor dimension. Fused Wild Rosemary  Made with fresh wild Rosemary crushed with fresh, certified organic early harvest Chetoui olives using 100% mechanical cold extraction methods.  This fused herb oil embodies the heart and soul or rosemary.  It is both complex and aromatic.
Use anywhere rosemary might be used.  Amazing with poultry, pork or lamb.  Spectacular drizzled over sautéed vegetables.  Mind-blowing with roasted potatoes.

Tuscan Herb – A delicious blend of herbs, sun-dried tomatoes and garlic infused olive oil. Use it on everything from salad dressings to marinades. Gourmet Specialty Oils

Japanese Roasted Sesame Oil  Our Japanese dark toasted sesame oil is roasted slow and low, and then pressed in small batches. It has tremendous depth of flavor and mouth-feel. One of the most flavorful and fragrant oils in the world! 

Black Truffle Pure Olive Oil  All Natural Black Truffle Pure Olive Oil.  This late fall, early winter truffle is used in the making of this savory oil. A ‘tea method’ is utilized which steeps the ripe truffles for extended periods of time in olive oil. The closely guarded, proprietary process yields our heady, complex Black Truffle oil. No extracts or chemicals are used in its’ production. Fantastic in cream-based soups, risotto or mashed potatoes!

Butternut Squash Seed Oil*  Seasonal Favorite! Only available for a limited time. A unique, all natural, very flavorful pure oil made from the first pressing of 100% non-GMO butternut squash seeds. This healthy oil is high in mono-and polyunsaturated fats and is a rich source of vitamin E. The oil has a deep golden colored hue with a nutty, buttery flavor reminiscent of toasted peanut or cashew.

Roasted Almond Oil  Our California Roasted Almond Oil is expeller pressed and lightly filtered with an amazingly delicate nose and deep roasted flavor. Great for sautéing, drizzling, baking, dipping, and whipping up a tasty vinaigrette.

Roasted French Walnut Oil  Our handcrafted, Roasted Walnut Oil, is made in Saumur, France, strictly following 150 year-old traditional methods. Slowly roasted to perfection, then expeller-pressed, and lightly filtered, it adds a rich walnut taste to salad dressing, pasta, grilled meat, and fresh baked pastries.

Roasted Pumpkin Seed Oil*  Seasonal Favorite! Only available for a limited time. Pure oil made from the first pressing of 100% non-GMO pumpkin seeds. The oil has a deep mahogany color with a taste reminiscent of sesame and savory, umami flavor with a silky finish. It is high in mono-and poly-unsaturated fats, cholesterol free, and without hydrogenated fats, artificial preservatives or colors. A savory complement to composed salads, grilled vegetables, sautéed leafy greens, or oven roasted fish. Try on fresh pasta or grilled scallops for a rich, distinctive flavor.

White Truffle Pure Olive Oil  A connoisseur’s olive oil. If you like the flavor and aroma of White Truffle, then you’ll love this oil. It’s a great finishing oil for many Mediterranean dishes, in mashed potatoes or drizzled on popcorn! It also makes an amazing aioli. A little goes a long way, so use sparingly!

Specialty Vinegars

Barrel Aged Pinot Noir Wine Vinegar – Woody and spicy on the nose, our deep ruby red, barrel-aged pinot noir vinegar is robust and rich. Its lively character is absolutely amazing in vinaigrettes, pickles, marinades, and dressings.

Champagne Wine Vinegar (France) – When you first taste our Champagne White Wine Vinegar, you’ll instantly fall in love with its smooth and elegant flavor. That’s due in part to the way in which it is produced. Unlike other Champagne vinegars, this one never undergoes a pasteurization process. By eliminating this step, the vinegar possesses a lovely, rich base. Notes: Imported from the Champagne region of France, the vinegar is a divine ingredient in salads, or try in homemade mayonnaise; simply whisk with extra virgin olive oil, eggs and mustard.

Orangic Red Wine Vinegar  – With an acidity of 6% , our Organic Red Wine Vinegar is blended from the finest Italian red wines, Lambrusco and Trebbiano , both of which re made from the highest quality grape varieties grown in Italy. It’s then aged slowly for more than ten years in white Italian oak barrels , without added sulfites, producing a full-bodied vinegar with exceptional flavor. The wine is converted to vinegar using a slow, natural fermentation. The finished product is a premium, natural, barrel-aged vinegar with a robust flavor.

Serrano Honey Ginger  – Our 2008 Sofi silver award-winning, artisan Serrano Honey Vinegar is sweet, tart, spicy, and made from 100% honey. Amazingly complex, it make a great addition to salsa, ceviche, Bloody Marys and shrimp. Toss with Slice strawberries and a grinding of black pepper for a delicious dessert. May be used in place of traditional grape based vinegar. Sulfite-free and produced in the USA.

Sherry Reserva Wine Vinegar – From Jerez, Spain and made in the traditional Solera system, our Sherry Reserva, 25 year aged Wine Vinegar, has a true sherry flavor that can only come from cask aging. This fine Spanish vinegar is fabulous in reduction sauces, glazes and whenever strength and depth of flavor is desired.

Dark Balsamics

18 Year Traditional – Our finest grade of aged balsamic condiment from Modena, Italy is produced in the Traditional Style. It is aged using the Solera System for up to 18 years in chestnut, oak, mulberry and ash barrels. With a 4% acidity, our Four Leaf Quality Equivalent Condimento is exceedingly rich, complex and dense. It pairs beautifully with any olive oil in our collection for vinaigrettes, glazes or marinades. Also try drizzled over ice cream or with fresh fruits and berries.

A-Premium Balsamic Vinegar  – Made with White Trebbiano Grape Must, our Premium Dark Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena and is caramelized in copper kettles over an open wood fire.  The grape must is then aged in a variety of wood barrels which are charred on the interior to add character and additional color during the aging process.  The result is complex, yet tart, vinegar with a touch of sweetness, subtle dried fruit characteristics, and 6% acidity. Extremely adaptable, it can be used with any E.V.O.O., as well as with our flavored oils.

Black Cherry Balsamic Vinegar Condimento – Rich and sweet Natural Black Cherry concentrate and other natural flavorings are combined with aged Balsamic Vinegar to produce a sweet, fragrant and very rich tasting product that has garnered rave reviews from our gourmet customers. Enjoy on salads that feature cheeses like feta or blue, or over orange and onion Sicilian salad. Our naturally flavored balsamic condimento is aged in the traditional Solera Method and comes from Modena, Italy.

Black Currant Balsamic Condimento – Balsamic condimento is naturally flavored with floral, sweet, black currant in this rich, unique balsamic condimento. Our naturally flavored balsamic condimento is aged in the traditional Solera Method and PGI certified to come from Modena, Italy.

Black Mission Fig Balsamic Vinegar Condimento – Made with natural ingredients, our aged fig balsamic vinegar from Modena is thick and ripe, bursting with fig flavor. It is aged in the traditional Solera Method and PGI certified to come from Modena, Italy.

Blackberry Ginger Balsamic – Wonderfully sweet, pleasingly tart and redolent with the clean, natural flavor of blackberry and ginger. It makes a fantastic dressing or marinade and is divine paired with our Persian lime olive oil. This balsamic is progressively aged in wood barrels according to the Solera Method. It is PGI (Protected Geographic Indication) certified to come from Modena, Italy.

Blueberry Balsamic – Our luscious blueberry balsamic vinegar is just as amazing over garden salad as it is over fruit salad. When paired with delicate extra virgin oil such as Arbequina, the intense blueberry flavor will shine. Also fantastic with our orange or lemon olive oils. Pairs well with blue and feta cheeses. Champagne Dark Balsamic – Our champagne dark balsamic vinegar is complex and rich. It owes its depth of flavor to Solera aged dark balsamic vinegar from Modena which is blended with sparkling white French Champagne vinegar. With an acidity of 6%, it adds a delightfully tart kick to many applications such as vinaigrettes, marinades and sauces.

Cinnamon-Pear Balsamic  This delightful vinegar is spicy and warm, perfect drizzled over fresh fruit or as a dessert topping. It has the unique taste of d’Anjou pear, and matches well with many of our sweeter, fruity oils for a delicious marinade or salad dressing. Our naturally flavored balsamic condimento is aged in the traditional Solera Method and PGI certified to come from Modena, Italy.

Dark Chocolate Balsamic – This dark chocolate Balsamic Vinegar is rich, thick, and resounds with the complexity of three different chocolates responsible for the depth of its’ flavor. Drizzle over vanilla gelato, mix with fresh berries, or add zing to your chicken mole sauce.

Dark Espresso Balsamic – This aged Balsamic Vinegar is amazingly complex, with layers of authentic espresso and dark roasted coffee. It makes a fantastic glaze or barbeque base for pork, beef or chicken. Add a shot to an “affogatto float”, which calls for a tall mug of vanilla gelato covered with coffee. Our naturally flavored balsamic condimento is aged in the traditional Solera Method and comes from Modena, Italy.

Lavender Balsamic Vinegar – Floral, sweet, and slightly herbaceous, our Lavender Balsamic captures the essence of this ancient flower. Tangerine Balsamic  This flavored balsamic vinegar is made with whole fruit tangerine essence added. The tart, versatile flavor makes this a customer favorite.

Vermont Maple Balsamic – Aged Pure Maple Balsamic, using real 100% pure maple produced at a small family farm in Vermont. This balsamic is outrageously good. Think pancakes, waffles, glazing bacon, pork chops, ice cream, dressings, marinades, chocolate, cake, fruit, and on, and on.

Violet Balsamic – Thick, rich and smooth, our 100% natural, aged violet balsamic is a floral feast for the senses. The clean flavor and aroma of delicate violet lends itself readily to salads, chicken, desserts and fruit. White Balsamics

Alfoos Mango – The Alfoos mango cultivar is considered, by many, to be one of the best in terms of sweetness, richness, and flavor. Our Alfoos Mango White Balsamic Condimento pairs exquisitely with our Persian Lime Olive Oil and complements shrimp, scallops, salad and salsaa for a tropical, sweet-tart twist.

Grapefruit White Balsamic – Our grapefruit white balsamic sparkles with crisp, clean citrus flavor. It has a perfect balance of acidity and natural sweetness. Try this amazing balsamic in dressings, paired with fennel. It makes a show- stopping white balsamic grapefruit granita. Our naturally flavored balsamic condimento is aged in the traditional Solera Method and PGI certified to come from Modena, Italy.

A-Premium White Balsamic – Made with White Trebbiano Grape Must, our White Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena however it is not carmelized. The result is a crisp, tart vinegar with a touch of sweetness. Extremely adaptable, it can be used with any E.V.O.O., as well as with our flavored oils. This is a tart Balsamic Vinegar with a residual grape flavor and 6% acidity.

Blenheim Apricot – The Blenheim variety is both sweet and tangy, with an intensely aromatic aroma of honeysuckle. We’ve married this with our aged white balsamic condimento, resulting in a collaboration that is crisp and tart. Great with grilled chicken, as a glaze, or served with cheese.

Cara Cara Orange Vanilla – This confectionary white balsamic condimento is aged for up to 12 years in Modena, Italy. It’s made from creamy, sultry Madagascar Vanilla and bright, fruity Cara Cara Orange. It is absolutely delightful with chocolate, fruit salad, sparkling water, mixed drinks, or drizzled over yogurt and vanilla ice cream.

Coconut – Our all natural Coconut White Balsamic is wonderfully sweet, pleasingly tart and redolent with the clean, natural flavor of coconut. It makes a fantastic dressing or marinade. This balsamic is progressively aged in wood barrels according to the traditional Solera Method and is PGI certified to come from Modena, Italy.

Cranberry Pear – This White Balsamic is clean, crisp, and very tart, boasting a lovely deep, rose blush. It has an amazingly fruity, complex bouquet that shines in a multitude of culinary applications. Use to dress fruit or vegetable salads, as a marinade, a glaze for poultry, with gelatin for a delicious fruit aspic or mixed drinks.

Pineapple – Our golden pineapple balsamic is sweet and tart with the heady aroma of fresh, ripe pineapple. This amazing zesty balsamic is the perfect complement to fruit salads and fresh berries. It adds substantial flavor without discoloration. Try pairing with soy sauce, ginger and our Garlic Extra Virgin Olive Oil for an amazing marinade.

Honey Ginger – Honey and ginger play well together and bring a gentle, spicy heat which balances perfectly with the moderate, natural acidity of our white balsamic condimento. This condiment is superlative when paired with our Persian Lime Extra Virgin Olive Oil and positively shines with our Japanese Toasted Sesame Oil. Mix an amzing marinade with the vinegar, toasted sesame oil, our Garlic Extra Virgin Olive Oil and soy sauce.

Jalapeno – Sweet, spicy, and tart, like you would expect from this chili-infused condimento. Use this to light up your marinades, splash in a ceviche, spice up a salsa, or blend into dressings to top salads or fruits.

Lemongrass Mint – Our Thai Lemon Grass Mint White Balsamic is tart, crisp, clean and absolutely delicious.  The natural flavors of Thai lemon grass and mint cooperate beautifully and make a dazzling base for marinades, dressings.  Notes: For a taste explosion, add diced fresh, hot Thai chilies and cilantro. Use this Asian inspired marinade to dress your seafood salad, noodles or use for a dipping sauce. Try mixed with rum for an out of this world mojito. Pairs great with our Basil, Lime or Cilantro & Roasted Onion olive oils.

Oregano – This is a sharp, White Balsamic Vinegar, infused with the exquisite flavor of Oregano, to produce a classic Mediterranean flavor. It’s a perfect complement to a wide variety of oils, and will create superb vinaigrettes.

Pomegranate-Quince  This sparkling ruby, jewel-toned, white balsamic owes its tart, crisp flavor to juicy California pomegranates and floral winter quince. It’s made from authentic white balsamic condimento, aged for up to 12 years in Modena, Italy.

Peach – Made with White Trebbiano Grape Must, our White Peach Balsamic does undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena but is not caramelized therefore it retains its white color. The result is a crisp vinegar with a touch of sweetness reminiscent of handcrafted vinegars from northern Italy. Extremely adaptable, it can be paired with any of our Extra Virgin Olive Oils, as well as our flavored oils to make a light, tart vinaigrette.

Sicilian Lemon – Playfully tart and pleasantly sweet, our Sicilian Lemon White Balsamic has a perfectly balanced acidity and a crisp, lemon flavor and aroma. Fabulous with seafood, in dressings or in mixed drinks.
